Stuffed Chicken

Ingredients:

4 boneless skinless chicken breasts
1 bag fresh spinach
3 cups seasoned breadcrumbs
4 slices gouda or mozzarella
2 eggs beaten
4 slices thin cut ham (optional)

Directions:

Butterfly chicken and pound out
salt and pepper chicken
dip in egg and coat with breadcrumbs
place chicken on lined baking sheet
lay 1 piece of cheese, 1 piece of ham and a handful of spinach on one side of chicken
fold chicken over and press firmly
cook on 375 degrees for 25-35 minutes or until juices run clear

These make large portions and could eat them by themselves.
